CBD-Infused Guacamole

No one in their right mind could possibly detest guacamole, right?

Well, there might be some exceptions, but for the purpose of this discussion, let’s assume that everyone adores this delectable green dip. When avocados are in season, it’s hard to resist the urge to fill your cart with this nutrient-packed superfood. And why wouldn’t you? Avocados enhance any dish at any time, plus they’re readily available throughout the year. This means you can enjoy this guacamole recipe at any holiday gathering, Cinco de Mayo festivities, or during an average chips-and-guacamole indulgent weeknight. Let’s make every day a celebration!

There’s a myth that guacamole is foolproof. However, this is far from the truth. Instead of listing potential pitfalls, I’m going to share my fail-proof guacamole recipe (you can thank me later). It’s a crowd-pleaser – light, refreshing, and since I am a cannabis connoisseur, it has a touch of CBD. Despite its popularity at parties, it doesn’t induce a high, so don’t blame the rapid disappearance of the guacamole on the munchies. CBD is non-psychoactive.

SELECTING THE PERFECT AVOCADO The key to stellar guacamole lies in perfectly ripe avocados. Here are two foolproof ways to test avocado ripeness:

Feel test: Give the avocado a gentle press using your palm, not your fingertips (which can bruise the fruit). A slight give indicates it’s ready to eat. A firm feel means it needs more time, while a soft texture may suggest it’s past its prime. Stem test: Gently tug at the avocado’s stem. If it reveals a green hue underneath, it’s ready. If the stem resists, give it a couple more days. A brown color signifies the fruit is overripe. AVOCADO: THE SUPERFOOD Avocados are a treasure trove of nutrients, boasting 20 different vitamins and minerals. They are rich in fiber, promote digestive health, lower cholesterol, regulate blood sugar levels, and support gut health. Surprisingly, they contain more potassium than bananas and are high in vitamin K. Blend them with spices and a dose of CBD, and you’ve got a super-healthy treat!

Serves 6

Ingredients 3 ripe Haas avocados 1-1/2 tablespoons fresh lime juice (more if needed) 1 large plum or Roma tomato, seeded and diced 1/4 cup cilantro leaves and tender stems, chopped 1 garlic clove 1/2 teaspoon salt (or more, to taste) 1 to 2 teaspoons minced jalapeño or Serrano pepper, with seeds and membrane removed (retain seeds and membrane for extra heat) CBD oil at desired potency (60mg for 10mg serving) Instructions Halve avocados and discard pits. Scoop out the flesh into a bowl. Add lime juice. Mash until creamy yet chunky. Make a paste of the garlic and salt on a chopping board. (Use the side of the knife, or simply mince salted garlic.) Fold in CBD oil, ensuring even distribution. Add tomato, cilantro, garlic-salt paste, and diced peppers. Adjust flavors with additional salt, peppers, and/or lime juice as needed. Serve right away or cover with cling wrap directly on the guacamole surface and chill up to one day.
